Japanese Gyudon Recipe ( 牛丼 )

TRADITIONAL JAPANESE RECIPE: Gyudon is another Donburi dish, also known 'Rice Bowl' like Oyakodon, but instead of eggs and chicken, Gyudon is topped with beef.

Gyudon is a much simpler and heartier kind of Donburi, very popular in japan.

The beef is thinly sliced and cooked in a sweetened soy sauce, which is then piled on top of rice. The rice obviously absorbs all the flavor of the meat and the sauce.. and the result is just so good.

Gyudon shops in Japan are very popular at lunch time. And they are everywhere. Wherever you have salarymen and offices, you'll have Gyudon restaurants.

The trick when cooking Gyudon at home is simple, you want to use thinly sliced beef with fat in it, and the meat has to be a bit more expensive than the one you usually use. Red meat without any fat makes the beef tough and dry when cooked, so use a cut of beef with enough fat like chuck shoulder roast.

How thin? Paper thin.

    600ml Boiling Water

     

    400gr Steamed Rice
    ( to serve )

     

    300gr Beef
    ( very thinly sliced )

     

    200ml Soy Sauce
    ( Japanese Say Sauce )

     

    80gr Grated Fresh Ginger

     

    1 Onion
    ( sliced )

     

    40gr Sugar
    ( for caramelised Onion )

     

    30gr Dashi Powder

     

    Sake




  • Imperial:

     

     

     

    1.3lb Boiling Water

     

    0.8lb Steamed Rice
    ( to serve )

     

    10.5oz Beef
    ( very thinly sliced )

     

    7oz Soy Sauce
    ( Japanese Say Sauce )

     

    2.8oz Grated Fresh Ginger

     

    1 Onion
    ( sliced )

     

    1.4oz Sugar
    ( for caramelised Onion )

     

    1oz Dashi Powder

     

    Sake




  • Cups:

     

     

     

    2 cups Boiling Water

     

    2 cups Steamed Rice
    ( to serve )

     

    2 cups Beef
    ( very thinly sliced )

     

    0.6 cup Soy Sauce
    ( Japanese Say Sauce )

     

    4 tablespoons Grated Fresh Ginger

     

    1 Onions
    ( sliced )

     

    2 tablespoons Sugar
    ( for caramelised Onion )

     

    2 tablespoons Dashi Powder

     

    Sake




 

 

 

Directions:


 

01 - Place the Water, Dashi Powder and Onions in a saucepan and boil for 3 minutes.

 

02 - Add Sugar, Sake, Onion, Soy Sauce, Beef, and stir to combine well. Slightly boil and simmer for 10 minutes.

 

03 - Place everything on the top of the Rice and serve.

 

04 - Ginger can be placed on top and Nori on the side.





Notes:


- The cooking time is probably the most important thing. If it is undercooked, the flavour will not stick to the Meat and the Onions might result too sharp. If it is overcooked, the Onions will become too soft and the flavour too strong.
