TRADITIONAL JAPANESE RECIPE: You may not know it but BBQ is a very Japanese thing. No kidding. But instead of ketchup they use Miso and Soy Sauce. Think about it. It's delicious.

Grilled Corn with Miso Butter Recipe ( 味噌バターコーン ) is a very easy and enjoyable side dish that can complete any meal. It’s amazing how miso tastes after a little bit of roasting on the grill.

Ingredients:

    4 Ears Corn

    1 Green Onion or Scallion
    ( chopped )



    For the Honey Miso Butter:

    56gr Unsalted Butter
    ( at room temperature )

    21gr Honey

    17gr Organic Miso Saikyo Sweet
    ( or White Miso)

    10.5gr Soy Sauce

    1.5gr Kosher or Sea Salt
    ( use half for Table Salt )




  • Imperial:

     

     

     

    4 Ears Corn

    1 Green Onion or Scallion
    ( chopped )



    For the Honey Miso Butter:

    8.81oz Unsalted Butter
    ( at room temperature )

    3.30oz Honey

    2.67oz Organic Miso Saikyo Sweet
    ( or White Miso)

    1.65oz Soy Sauce

    0.23oz Kosher or Sea Salt
    ( use half for Table Salt )




  • Cups:

     

     

     

    4 Ears Corn

    1 Green Onion or Scallion
    ( chopped )



    For the Honey Miso Butter:

    4 tablespoons Unsalted Butter
    ( at room temperature )

    1 tablespoons Honey

    1 tablespoons Organic Miso Saikyo Sweet
    ( or White Miso)

    2 teaspoons Soy Sauce

    0.25 teaspoons Kosher or Sea Salt
    ( use half for Table Salt )




 

 

 

Directions:


 

01 - Strip the husks off the Corn.

02 - In a small bowl, mix all the Ingredients for the Honey Miso Butter, cover with cling film and set aside.

03 - You can either use an outdoor grill or a regular indoor grill and set it to high.

04 - Soak a paper towel in Olive Oil and rub the grill with it, or spray the grill with cooking spray.

05 - Place the Corns on the grill and cover if you can. If you don't have a grill top, you can place a frying pan upside down over the Corns, making sure the handle won'r burn (don't use aluminum)

06 - Brush the Corn with the Honey Miso Butter as it grills.

07 - Cook for about 10-15 minutes or once they've turned golden brown.

08 - Garnish with chopped Scallions and serve with extra Honey Miso Butter sauce.





Notes:


- STEP 01: Leave the husk attached at the stem end (or you can completely discard it).

- If you keep the husks on: Remove the Corn silk and fold the husk back over the stalk. Tie the husk with string or a strip of husk to form a handle.

It’s easier to husk corn under running water.

- STEP 05: when you place the Corns in the grill, keep the husks off of it or they will burn. Only place the Corn on it.
