TRADITIONAL JAPANESE RECIPE: Doria is a Japanese western-style rice casserole dish with a creamy white sauce placed on top. You might think this isn't a real Japanese dish and in part, you're right. In fact, although it was inventen IN JAPAN, its creator was a Swiss chef who worked in a hotel in 1930.

The name Doria has italian origins, like most of the art in Japan, Japanese people love Italy. The name Doria comes from a famous Italian Navy General Andrea Doria. Doria outfitted eight galleys and patrolled the Mediterranean, fighting the Ottoman Turks and the Barbary pirates, augmenting both his reputation and his fortune. He scored a brilliant victory over the Turks at Pianosa in 1519. This was the link with the Shimps... Sea... Mr. Doria.

Today Doria dish can be found everywhere, from regular Japanese restaurant to Italian restaurant chain like Saizeriya and all of the convenient stores of any chain.

    275gr Rice

    120gr Shrimp
    ( cut into bite size pieces )

    0.25 Brown Onion
    ( coarsely chopped )

    6 Mushrooms
    ( sliced thinly )

    60gr Ketchup

    14gr Butter

    1.5gr Salt

    White Pepper
    ( to taste )



    Bechamel Sauce:

    360ml Milk

    50gr Mozzarella Cheese
    ( shredded )

    42gr Butter

    24gr Flour

    1.5gr Salt
    ( to taste )

    White Pepper
    ( to taste )




  • Imperial:

     

     

     

    9.70oz Rice

    4.23oz Shrimp
    ( cut into bite size pieces )

    0.25 Brown Onion
    ( coarsely chopped )

    6 Mushrooms
    ( sliced thinly )

    2.11oz Ketchup

    0.49oz Butter

    0.05oz Salt

    White Pepper
    ( to taste )



    Bechamel Sauce:

    12.96oz Milk

    1.76oz Mozzarella Cheese
    ( shredded )

    1.48oz Butter

    0.84oz Flour

    0.05oz Salt
    ( to taste )

    White Pepper
    ( to taste )




  • Cups:

     

     

     

    1.5 cups Rice

    1 cup Shrimp
    ( cut into bite size pieces )

    0.25 Brown Onion
    ( coarsely chopped )

    6 Mushrooms
    ( sliced thinly )

    0.25 cup Ketchup

    1 tablespoon Butter

    0.25 teaspoon Salt

    White Pepper
    ( to taste )



    Bechamel Sauce:

    1.25 cups Milk

    0.25 cup Mozzarella Cheese
    ( shredded )

    3 tablespoons Butter

    3 tablespoons Flour

    0.25 teaspoon Salt
    ( to taste )

    White Pepper
    ( to taste )




 

 

 

Directions:


 

01 - Preheat the oven to 220C / 425F and place the rack to the top of the oven.

02 - Butter the inside of two gratin dishes.



03 - While the oven warms up, heat a frying pan with 14gr / 0.49oz / 1 tablespoon of Butter.

04 - Cook the Shrimp, Onion, and Mushrooms in the Butter at medium heat for a couple of minutes making sure not to burn the Butter.

05 - Add the Steamed Rice ( for 2 people ) and cook for a couple of extra minutes stiring constantly.

06 - Season with Salt and Pepper.

07 - Move the rice from the centre of the pan making room for the Ketchup. Pour the ketchup in and cook it without mixing it for 30 seonds. Then, mix it with all the other ingredients for 2 minutes. Turn off the heat and set aside.



08 - In a new frying pan now, over low hear, make the Bechamel Sauce. Melt the Butter.

09 - Slowly sift and add the Flour to the pan.

10 - Once a thick mixture starts to form, slowly, add the Milk and whisk until thick and smooth making sure to break all the lumps.

11 - Season with Salt and Pepper.



12 - Divide the Rice into the two buttered gratin dishes (prepared in STEP 02).



13 - Pour the Sauce over the Rice in each dish.

14 - Sprinkle Mozzarella Cheese over the Sauce.

15 - Bake in the oven for 7-8 minutes until browned. Serve hot.

- STEP 02: the Butter on this step is not in included in the ingredients.

My kids love it! I followed exactly the recipe and the step. I also threw spinach and use shimeji mushroom instead.
