TRADITIONAL JAPANESE RECIPE: Many websites out threre say that Candied Sweet Potatoes are a fall treat in Japan. But the truth couldn't be further from it. Candied Sweet Potatoes now a day are everywhere. Convenient stores, supermarkets and even small vendors have them.
You can fry, boil, steam and even grill them. Totally up to you. Glaze in a sweet sugary syrup and finish with a sprinkle of black sesame seeds if you feel a bit funky.
My kid and I love all kinds of potatoes.
In Japanese, these candied sweet potatoes are called Daigaku Imo (大学芋), literally meaning “University Potatoes”. There are a few theories regarding the origin of name but basically this dish was a popular snack at universities in Tokyo during early 1900’s.
In Japan, both sweet potatoes (called "satsuma-imo") and true purple yams (called "daijo" or "beni-imo") are grown.

3 tablespoons Shouyu Sauce
( normal Soy Sauce )
2 teaspoons Sugar
Vegetable Oil
( for frying - Method 01 )
Directions:
01 - Wash and cut the Sweet Potatoes.
02 - Boil them until soft.
03 - Drain the water and transfer the Potatoes in a pot.
04 - Add the Soy Sauce and Sugar and cook them for a couple of minutes until they caramelize. Serve.
