TRADITIONAL JAPANESE RECIPE: Celery is normally the classic italian ingredients, but if you add a bit of vinegar it turns into Japanese. Celery Sunomono has a strong flavor and may not be able to be used in all Japanese dishes; however, you can try a few recipes together with Celery Sunomono.

45ml Rice Vinegar
20gr Sugar
7gr Sesame Seeds
2.5ml Sesame Oil
1.5gr Salt
Cups:
4 Stalks Celery

3 tablespoons Rice Vinegar
1.5 tablespoons Sugar
1.5 tbsp Sesame Seeds
0.5 teaspoon Sesame Oil
0.25 teaspoon Salt
Directions:
01 - Remove the ribs from the Celery.
02 - Slice the Celery as thin as you can, and add to a bowl with the Salt.
03 - Let it sit for 5 minutes and squeeze the Water out from the Celery.
04 - In a different bowl, whisk Rice Vinegar, Sugar, Salt and Sesame Oil together, until the Sugar has dissolved.
05 - Add the Vinegar mixture and the Sesame Seeds to the Celery and mix well.
06 - Chill for 30 minutes. Serve.
