TRADITIONAL JAPANESE RECIPE: Omurice ( オムライス ) is fried rice seasoned with ketchup and wrapped with a crepe-like thinly fried egg. It's one of the most loved dishes in Japan and it's definitely kids' favourite.
But Omurice has a flaw, it doesn't have a lot of vegetables in it. Cauliflowers are a convenient way to add veggies to your meal while enjoying the Omurice concept.
Cauliflower Omurice is a good alernative to the usual steamed Rice Omurice.
Chop and sautee all the vegetables until well cooked and tender.
Cauliflower Omurice is also perfect if you are on a diet, and you can enjoy a healthier lower calorie version of the dish from time to time.

2.5 cups Cauliflower
( chopped very small )

3 tablespoons Ketchup
1 tablespoon Butter
1 teaspoon Oil
Salt and Pepper

Egg Crepe:
2 Eggs
1 teaspoon Oil

Directions:
01 - Chop Onion, Carrot and Pepper in very small pieces and set aside.
02 - Cut the Cauliflower in very small bits and set aside.
03 - Combine Oil and Butter in a frying pan at medium heat and wait for the Butter to melt.
04 - Add the Cauliflower, Onions, Carrot and Green Peppers and cook for a couple of minutes, or until the Onion has become translucent and the Cauliflower and Carrots bits are cooked, making sure not to burn the Butter.
05 - Season the Rice with Salt and Pepper.
06 - Make room in the frying pan and add the Ketchup. Cook only the Ketchup for 30 seconds.
07 - Mix the Vegetables and Ketchup and fry together for 2 minutes.
08 - Place half of the cooked Ketchup-Vegetables into a bowl, press lightly, and unmold on a plate. This should be enough to make a small Vegetable 'hill' on your dish (do the same for the other serving).
09 - Beat the Eggs and add a pinch of Salt.
10 - Heat another frying pan with half Oil.
11 - Pour half Egg Mixture on the hot frying pan and make a crepe-like thin round egg sheet.
12 - Cover the molded Vegetable with the Egg Crepe.
13 - Top with Ketchup. Serve.
