Japanese Bolognese Doria Recipe ( ボロネーゼ・ドリア )

TRADITIONAL JAPANESE RECIPE: Very similar to gratin, Doria is rice topped with delicious something and covered with Bechamel Sauce and melted Cheese. This meal is a comfort dish for many Japanese.

In Japan, and outside Japan, many use ketchup for the meaty version of Doria, but for this Bolognese Doria recipe we'll use the autentic Bolognese Sauce recipe. This means you'll be required to do some more cooking but it will be worth it in the end.

    275gr Rice



    Bolognese Sauce:

    250gr Ground Beef and Pork

    0.5 Carrot
    ( chopped )

    0.5 Onion
    ( chopped )

    0.5 Celery
    ( chopped )

    100ml Milk

    100ml Red Wine

    100ml Water

    25gr Butter

    Parmesan Cheese ( for topping )

    50gr Extra Virgin Olive Oil

    Salt and Pepper
    ( to taste )



    50gr Mozzarella Cheese
    ( shredded )



    Bechamel Sauce:

    360ml Milk

    42gr Butter

    24gr Flour

    1.5gr Salt
    ( to taste )

    White Pepper
    ( to taste )

    9.70oz Rice



    Bolognese Sauce:

    8.81oz Ground Beef and Pork

    0.5 Carrot
    ( chopped )

    0.5 Onion
    ( chopped )

    0.5 Celery
    ( chopped )

    3.5oz Milk

    3.5oz Red Wine

    3.5oz Water

    0.88oz Butter

    Parmesan Cheese ( for topping )

    1.7oz Extra Virgin Olive Oil

    Salt and Pepper
    ( to taste )



    1.76oz Mozzarella Cheese
    ( shredded )



    Bechamel Sauce:

    12.96oz Milk

    1.48oz Butter

    0.84oz Flour

    0.05oz Salt
    ( to taste )

    White Pepper
    ( to taste )




  • Cups:

     

     

     

    1.5 cups Rice



    Bolognese Sauce:

    1 cup Ground Beef and Pork

    0.5 Carrot
    ( chopped )

    0.5 Onion
    ( chopped )

    0.5 Celery
    ( chopped )

    0.5 cup Milk

    0.5 cup Red Wine

    0.5 cup Water

    2 tablespoons Butter

    Parmesan Cheese ( for topping )

    2 tablesoons Extra Virgin Olive Oil

    Salt and Pepper
    ( to taste )



    0.25 cup Mozzarella Cheese
    ( shredded )



    Bechamel Sauce:

    1.25 cups Milk

    3 tablespoons Butter

    3 tablespoons Flour

    0.25 teaspoon Salt
    ( to taste )

    White Pepper
    ( to taste )




 

 

 

Directions:


 

For the Bolognese:

01 - Pour half of the Oil in a large pan, sautee chopped Carrot, Onion and Celery over medium heat for about 5 minutes.

02 - Add the Meat and cook for another 3 minutes, stiring all the times until the meat has changed colour.

03 - Pour Tomato Sauce, Salt and Pepper ( to taste ), Red Wine and the remaining Extra Virgin Olive Oil in and cook for 30 minutes, or until the Wine has evaporated.

( Start steaming the Rice in the rice cooker )

04 - Pour in Milk and cook for 15 minutes.

05 - Finally, add the butter and cook for 5 mintues. Turn the heat off, cover and set aside.



06 - Preheat the oven to 220C / 425F and place the rack to the top of the oven.

07 - While the oven warms up, butter 2 gratin dishes, and move to the Bechamel Sauce.



For the Bechamel Sauce:

08 - In a new frying pan now, over low hear, make the Bechamel Sauce. Melt the Butter.

09 - Slowly sift and add the Flour to the pan.

10 - Once a thick mixture starts to form, slowly, add the Milk and whisk until thick and smooth making sure to break all the lumps.

11 - Season with Salt and Pepper.



12 - Divide the Rice into the two buttered gratin dishes (prepared in STEP 07).

13 - Pour the Bolognese Sauce over the Rice in each dish.

14 - Generously top with Parmesan Cheese...

15 - ... followed by the Bechamel Sauce, to cover everything.

14 - Sprinkle Mozzarella Cheese over the Sauce.

15 - Bake in the oven for 7-8 minutes until browned. Serve hot.





Notes:


- STEP 07: the Butter on this step is not in included in the ingredients.

I tried making this recipe and I couldn't believe how well bolognese and rice match. My kids loved it. They're very picky when it comes to food but they devoured it. I believe I could make this all year around without problems. Maybe adding some vegetables to it.
