15ml Sake
15ml Mirin
10gr Ground Sesame Seed
TRADITIONAL JAPANESE RECIPE: Shigure means autumn shower and refers to a style of cooking by simmering. Put them together and you have a great tasting dish of simmered beef. Why shigure?
The dish actually got its name because it is said that its flavor is as intense and fleeting as an autumn rain. With such a beautiful name, classic Japanese culinary poetry here at its best, you can't help but enjoy this intensely flavorful dish!
This intense seasoned beef can be kept in the fridge up to 3 days. Perfect for lunch and busy weekday dinners when you want just that little extra kick.
Beef Shigureni is very similar to Gyudon but cooked longer to get a more tender texture.
The beef has to be cut very thinly. When beef is partially frozen, it is easier to slice thin.
This dish has a sweet and salty flavor that goes very well with steamed rice.

400gr Beef

Cups:
2 cups Beef
1 cup Water
4 tablespoons Soy Sauce
3 tablespoons Sugar
1 tablespoon Ginger Root
1 tablespoon Sake
1 tablespoon Mirin
1 tablespoon Ground Sesame Seeds
Directions:
01 - Cut Beef and Ginger Root into 5cm / 2in long thin strips.
02 - Heat the Water in a pot and add the cut Ginger, Soy Sauce, Sugar, Sake, and Mirin.
03 - Once the Water boils, add the Beef and stir well.
04 - Cover the pot and cook for 20-30 minutes.
05 - Uncover and continue to cook until liquid is almost all gone.
06 - Remove from the heat and stir in the Sesame Seeds.
07 - Sprinkle with some extra Sesame Seeds before serving.
Notes:
