TRADITIONAL JAPANESE RECIPE: Making Ohitashi is a great way to eat spring vegetables. Although spinach is the most popular, you can make ohitashi with any sort of vegetables. This time we are gonna make it with Asparagus. Yes, those veggies that make your pee smell funny!
Ohitashi literally means “soaked” in dashi-based sauce, and all you need to do is to soak the veggies (usually steamed or boiled) in that sauce.

110ml Dashi
30gr Soy Sauce
5gr Sugar
Katsuobushi
( Dried Bonito Flakes )
Cups:
1 bunch of Asparagus
0.5 cup Dashi
2 tablespoons Soy Sauce
1 teaspoon Sugar
Katsuobushi
( Dried Bonito Flakes )
Directions:
01 - Preheat the oven to 220C / 425F degrees.
02 - Cut off the tough end of the Asparagus and place them on a baking sheet.
03 - Roast the Asparagus for about 15-20 minutes or until tender.
04 - Mix Dashi, Soy Sauce and Sugar in a bowl or a shallow pan that is large enough to soak the Asparagus.
05 - Soak the roasted Asparagus in the prepared Dashi Sauce turning every now and then.
( Ideally you should soak them for about 1 hour or longer, but if you don't have time 20 minutes can do it )
06 - Chill or serve right away with a sprinkle of Katsuobuhi.
Notes:
- There are two kinds of Asparagus sizes, big and small. In this recipe we've used the small ones.

I normally eat spinach ohitashi, I've never tried asparagus ohitashi. Thanks
