TRADITIONAL JAPANESE RECIPE: Ajitsuke Tamago or Ajitama (in english Seasoned Eggs), or Ramen Eggs are delicious Eggs marinaded in a sauce perfect even for salads and rice bowl dishes.
A good bowl of Ramen is built on good ingredients, Broth, Noodles, Chashu, and Eggs. In the west some people do not enjoy Eggs but Japanese people would argue Eggs are a must.
When done right, Ajitsuke Tamago are creamy and full of umami.
The sauce can be very strong so you can add some water to weaken the sauce a little.

Directions:
01 - In a small pot, mix together Soy Sauce, Mirin, Sake and Sugar.
02 - Bring to a boil and stir until the Sugar has completely dissolved.
03 - Now, lower the heat and simmer for about 1 minute. Set aside and let the sauce cool completely.
04 - In another pot, boil some water and cook the Eggs for 6-9 minutes (check Notes).
05 - After 6-9 minutes, place the pot under ice cold running water for 10-15 minutes, or simply long enough to completely cool.
06 - Peel the Eggs.
07 - Place the Eggs in a plastic bag and add the Marinade Sauce made in Step 1 to 3.
08 - Remove all the air from the bag, making sure the eggs are completely submerged in the marinade sauce, and keep them in the fridge overnight or at least 8 hours.
To Serve:
09 - Remove the Eggs from the bag and cut them in halves and place them inside your Ramen.
Notes:
- Ramen eggs will keep for around 4 days refrigerated in their liquid or out of it. The eggs will likely be fully cured after 2 days.
- When you add the first egg, set a 7-minute timer. 6 to 6 ½ minutes for runny egg yolk and 8 to 9 minutes for custard-like egg yolk but not runny
- If you want your Egg Yolk to be in the center, gently rotate the eggs with chopsticks once in a while for the first 3 minutes so the egg yolk will be in the center.
- To cut the Eggs you can use a string, knife, or cheese cutter. Anything you like.

I've made this recipe many times now and the eggs are amazing. Once I let them marinate for 24 hours and that was way too strong for me. I guess 8 hours is just the perfect amount of time for these eggs.
