Japanese Abura Soba Recipe ( 油そば )

TRADITIONAL JAPANESE RECIPE: Abura Soba ( 油そば ) meaning Oil Noodles, is a lesser-known brothless Ramen that originated in Tokyo in the 50s.

Many versions of this dish are available today but this is one of the most common version you can find.

    4 portions Chinese Noodles



    Toppings:

    4 Eggs

    Menma
    (fermented bamboo shoots)

    Green onion/Scallion
    (chopped)

    4 Chashu / Japanese Braised Pork Belly Slices
    ( or your favourite )



    Sauce Ingredients:

    75gr Oyster Sauce

    68gr Soy Sauce

    60gr Water

    60gr Vinegar

    52gr Sesame Oil

    5gr Chicken Fat or Lard
    ( or Vegetable Oil/Sesame Oil )

    2gr Wei Pa
    ( or Chinese Soup or Chicken Soup Stock Granules)

    8gr Sugar

    2gr Dashi Stock Granules



    Optional:

    6gr XO Sauce




  • Imperial:

     

     

     

    4 portions Chinese Noodles



    Toppings:

    4 Eggs

    Menma
    (fermented bamboo shoots)

    Green onion/Scallion
    (chopped)

    4 Chashu / Japanese Braised Pork Belly Slices
    ( or your favourite )



    Sauce Ingredients:

    1.64oz Oyster Sauce

    2.39oz Soy Sauce

    2.11oz Water

    2.11oz Vinegar

    1.83oz Sesame Oil

    0.17oz Chicken Fat or Lard
    ( or Vegetable Oil/Sesame Oil )

    0.07oz Wei Pa
    ( or Chinese Soup or Chicken Soup Stock Granules)

    0.28oz Sugar

    0.07oz Dashi Stock Granules



    Optional:

    0.21oz XO Sauce




  • Cups:

     

     

     

    4 portions Chinese Noodles



    Toppings:

    4 Eggs

    Menma
    (fermented bamboo shoots)

    Green onion/Scallion
    (chopped)

    Sauce Ingredients:

    4 tablespoons Oyster Sauce

    4 tablespoons Soy Sauce

    4 tablespoons Water

    4 tablespoons Vinegar

    4 tablespoons Sesame Oil

    1 teaspoons Chicken Fat or Lard
    ( or Vegetable Oil/Sesame Oil )

    0.5 teaspoons Wei Pa
    ( or Chinese Soup or Chicken Soup Stock Granules)

    2 teaspoons Sugar

    1.5 teaspoons Dashi Stock Granules



    Optional:

    1.5 teaspoons XO Sauce




 

 

 

Directions:


 

01 - Boil the Eggs.

02 - Cool the Eggs under running water and then remove the shell. Set aside.

03 - In a bowl mix all the Sauce Ingredients together, and set aside.

04 - Boil the Noodles.

05 - Once the Noodles are ready, drain them and using the same pot, mix Noodles and the Sauce prepared in STEP 03.

06 - Divide the Noodles into 4 dishes and pour the leftover sauce on each one of them.

07 - Top with the Topping Ingredients and with some more Sauce. Serve.





Notes:


 

- You can warm up the Sauce Ingredients in a bowl if you enjoy warm Noodles.

- Topping ingredients can change based on your taste.

I've tried this soba in a shop called Beefst in Shinjuku, Tokyo. Topped with japanese roast beef and a carbonara like sauce. Glad to have found this recipe.
