TRADITIONAL ITALIAN RECIPE: This is the traditional homemade pizza made by all moms and grandmothers in Italy. This recipe includes pizza dough crust, topping and pizza sauce to make the perfect pizza at home.

For the flour you can easily use bread flour (which is high in gluten and will make the pizza crispier), all-purpose flour or the one sold in italy type 00/zero-zero.

Making homemade pizza might seem like a lot of work but it really take so little.

Ingredients:

    330gr Flour

    200gr Warm Water
    ( Lukewarm Warm )

    10gr Salt

    8gr Yeast

    5gr Sugar



    For the Tomato Sauce:

    300gr Passata

    Olive oil

    3 Garlic Cloves
    (crushed)

    Sweet Italian Basil

    5gr Sugar

    Salt
    (to taste)



    Topping:

    2 Mozzarella Balls

    Parmesan Cheese

    11.64oz Flour

    7.05oz Warm Water
    ( Lukewarm Warm )

    0.35oz Salt

    0.28oz Yeast

    0.17oz Sugar



    For the Tomato Sauce:

    10.58oz Passata

    Olive oil

    3 Garlic Cloves
    (crushed)

    Sweet Italian Basil

    0.17oz Sugar

    Salt
    (to taste)



    Topping:

    2 Mozzarella Balls

    Parmesan Cheese

    2.5 cups Flour

    0.7 cup Warm Water
    ( Lukewarm Warm )

    2 teaspoons Salt

    1 tablespoon Yeast

    1 teaspoon Sugar



    For the Tomato Sauce:

    1 cup Passata

    Olive oil

    3 Garlic Cloves
    (crushed)

    Sweet Italian Basil

    1 teaspoon Sugar

    Salt
    (to taste)



    Topping:

    2 Mozzarella Balls

    Parmesan Cheese




 

 

 

Directions:


 

 

 

01 - Put the Hot Water in a large bowl.

02 - Add the Sugar and the Yeast, and stir gently and let sit for 5 to 10 minutes, or until the Yeast activates by turning into a foam on top of the water.

03 - Now, add the Salt.

04 - Gradually add in the Flour as you stir the mixture simultaneously. You know you have added enough Flour when the mixture becomes too thick to stir.

05 - Knead the dough.





06 - Take the Dough out of the bowl and put it on a clean and well-floured surface ( a marble counter or clean table is best ).

07 - Gather the Dough into a pile and begin pressing it together. Press the heels of your hands firmly into the Dough, pushing forward slightly.

08 - Fold the far edge of the Dough upwards, towards you, and press it into the middle of the ball. Rotate it slightly, too. Repeat this press-fold-turn sequence for the duration of the kneading process.

09 - Put the Dough back in the bowl and let the Dough rise up for 2 hours at room temperature (inside a switched off oven to retain its humidity or 5 hours in the refrigerator).



While you wait for the Dough, make the Tomato Sauce:

10 - In a pot, combine all the ingredients and cook for 5-10 minutes.

11 - Preheat the oven to 240C / 460F

12 - Place the Dough on a floured (or oiled) oven dish (50x30cm / 19x11in or smaller) and mold the Dough to cover the dish.





13 - Spread over the Tomato Sauce and bake for about 15 minutes or until the pizza is cooked.

14 - Top with Parmisan Cheese cheese and then scatter over the Mozzarella. Pour a bit of Extra Virgin Olive Oil and bake again for 3 minutes or until the Mozzarella has melted.

15 - Cut in 6 parts (3 for each person) and serve hot.

Notes:


 

- Take some Yeast off if you decide to leave it resting in the fridge for 14-18 hours. The Dough can raise within 2 hours in the oven.

 

- Don't knead the Dough too long. The texture changes fast. Every minutes counts.
