TRADITIONAL ITALIAN RECIPE: I find making this Dish an incredibly relaxing activity. It's easy and super tasty, and a little bit posh. Saffron is the most expensive ingredient on the planet and it takes so much effort to make a tiny tiny amount of it. In the city where I come from, Saffron, is widly used in many many dishes, so everytime I use Saffron I feel home.

 

Back to it price... I once went to India to visit a Saffron field and found out it was guarded by the indian army. That's how much Saffron costs.

 

In this recipe the trick is to steam Zucchini and Onion over medium-low heat and gently heat Saffron without burning it.

Ingredients:





  Conversions


  • Metric:

     

     

     

    400gr Short Pasta

     

    2 Zucchini

     

    1 large Onions
    ( or 2 small )

     

    2 Saffron Sachets

     

    Olive Oil

     

    Salt to taste




  • Imperial:

     

     

     

    0.8lb Short Pasta

     

    2 Zucchini

     

    1 large Onions
    ( or 2 small )

     

    2 Saffron Sachets

     

    Olive Oil

     

    Salt to taste




  • Cups:

     

     

     

    4 handfuls Short Pasta

     

    2 Zucchini

     

    1 large Onions
    ( or 2 small )

     

    2 Saffron Sachets

     

    Olive Oil

     

    Salt to taste




 

 

 

Directions:


 

01 - Bring to the boil a large pan of salted water.

 

02 - Throw in the Short Pasta.

 

03 - Chop Onions and Zucchini and cook everything in a large frying pan over medium-low heat. Cook in some Oil and one idle of pasta cooking water to steam everything and create a thick sauce.

 

04 - In a glass, mix one idle of pasta cooking water and Saffron, and pour it into the frying pan. Stir for one minute and then turn the heat off.

 

05 - Drain Pasta al dente and add it to the frying pan over low-medium heat. Mix to combine until all water has evaporated.

 

06 - Salt to taste. Serve.

This was so tasty! I'm always amazed that the best dishes are the simplest ones. This dish really taste good. I've made it again today but hacked it a bit adding mushrooms yet this dish is perfect without any altering.
