TRADITIONAL ITALIAN RECIPE: This recipe was made in Naples. It is unbeleavable easy and the result is unique.
This pasta is one reason why I always keep a few boxes of tomatoes and beans in my pantry. Beans contribute protein to this pasta, which makes a great vegan ( and vegetarian ) dish if you serve it without the cheese.
If you want your pasta to have a long, happy marriage with its sauce, it's best to cook them together with a little of the pasta-cooking water. Plus, that method reduces the chance of overcooking the pasta, since the pasta cooks more slowly once it's simmering in its sauce.

1.1lb Riccio Red Tomatoes
0.8lb Cannellini White Beans
0.8lb Spaghetti Pasta
1.7oz Extra Virgin Olive Oil
( + for sautéing )
4 Cloves of Garlic
Basil
Salt and Black Pepper
( to taste )
Directions:
01 - In a large frying pan saute' Garlic.
02 - Remove the Garlic... or leave it in.
04 - Add Tomatoes, chopped, and cook for 10 to 15 minutes.
05 - Cook Pasta in hot boiling salted water.
06 - While cooking the Sauce add Cannellini White Beans, Salt and Oil to your liking ( Ingredient quantities above should be viewed as guidlines ).
07 - Mix in 12 leaves of Basil and cook for 2 minutes, stiring well to allow the sauce to catch Basil's aroma.
08 - Drain Pasta just al dente and combine with Sauce.
09 - Cook for 1 ~ 2 minutes. Serve.
Notes:
- You can even finely chop the Garlic.
- In a restaurant you will cook a lot of pasta in the same pot of water over the course of your shift. This water will end up having quite a bit of starch. Using a bit of this starchy water will help the sauce adhere to the pasta. At home you can cook Pasta into less water.

![]() November 29, 2019 I cooked this for my meatless diet and it was fabulous! I used farfalle pasta because I didn't have normal penna. Beans didn't stick to the pasta but I ate it with a spoon so it was ok. Thanks for having lots of vegetarian dishes. |
