TRADITIONAL ITALIAN RECIPE: I have been obsessed with pizza lately. I always love it but lately it’s been particularely worse.

I've made Pizza style Sandwiches, instead of mayo or mustard I mixed mossarella and tomatoes.

One of my favorite quick sandwiches is a slice of bread with pizza sauce and Mozzarella Cheese. After having it the other day, I thought that it would be great that great topping on a chicken breast for dinner. Oh boy, I love it when I’m right!

It was super easy and super delicious!

Ingredients:

  • Metric:

     

     

     

    4 Chicken Breast

    100gr Parmesan Cheese

    240gr Low-Moisture Mozzarella

    120gr Extra Virgin Olive Oil

    15gr Oregano



    For the Pizza Sauce:

    1L. Italian Passata di Pomodoro
    ( or half Passata and half regular Tomato Sauce )

    90ml Olive Oil

    Pinch of Salt

    Fresh Basil



    Optional:

    Sugar
    ( to remove the tomato's acidity )




  • Imperial:

     

     

     

    4 Chicken Breast

    3.5oz Parmesan Cheese

    8.4oz Low-Moisture Mozzarella

    4.2 Extra Virgin Olive Oil

    0.5oz Oregano



    For the Pizza Sauce:

    2.2lb Italian Passata di Pomodoro
    ( or half Passata and half regular Tomato Sauce )

    3.1oz Olive Oil

    Pinch of Salt

    Fresh Basil



    Optional:

    Sugar
    ( to remove the tomato's acidity )




  • Cups:

     

     

     

    4 Chicken Breast

    1 cup Parmesan Cheese

    1 cup Low-Moisture Mozzarella

    8 tablespoons Extra Virgin Olive Oil

    4 tablespoons Oregano



    For the Pizza Sauce:

    4 cups Italian Passata di Pomodoro
    ( or half Passata and half regular Tomato Sauce )

    6 tablespoons Olive Oil

    Pinch of Salt

    Fresh Basil



    Optional:

    Sugar
    ( to remove the tomato's acidity )




 

 

 

Directions:


 

For the Pizza Sauce:

 

01 - In a saucepan, heat Passata over a medium-low heat until hot; about 5 minutes.

02 - Add Extra-Virgin Olive Oil stir and cook for extra 10 minutes over low heat.

03 - Add Basil and Salt ( and Sugar is the Tomato Sauce is too acid ).

04 - Cook for more 5 minutes.

 

 

 

05 - Place the Chicken Breasts on an oven tray and cut them on top.

 

06 - Fill the cuts with Tomato Sauce and Mozzarella Cheese.

 

07 - Top with Parmesan Cheese ( Optional: plus extra Mozzarella ), Extra Virgin Olive Oil and Oregano.

 

08 - Bake at 180C / 350F for 20-30 miutes.

 

09 - Serve with estra Pizza Sauce.





Notes:


- This Sauce can be stored in fridge for 2 or 3 days.

- If you decide to use the Basil for you Pizza Sauce then, you can leave some Basil Leaves inside the Oil the day before. In this way the Oil will automatically have a soft Basil flavour.

- Some people in Italy do not cook the "Passata", putting it straightaway on the pizza dough. This is ok, but some canned or bottled Tomato Sauce have high level of bacteria, so you might want to consider this before doing so.
