TRADITIONAL ITALIAN RECIPE: A good meatball is tender, never tough. Using this recipe you will learn the basic traditional italian recipe for meatballs.

 

The key to making a tender meatball is to use an appropriate amount of breadcrumbs. You can use beef, pork, or veal for your meatballs, but again, if you do not use enough bread, they will be tough.

 

Some people make a meatball solely out of bread, and called them Breadballs... and they are heavenly!

 

Typical italian ricette for polpette al forno call for 500 grams of carne and about 100 or more grams of pane grattugiato and 100 grams of latte. Keep this in mind. If you don't have these three ingredients and amount, that's not italian.

 

 

 

Spaghetti with Meatballs is not Italian!

 

Well, I'm Italian. I was born in Milan and I had meatballs in my pasta quite often. I don't understand why people that never had it, just call it 'not Italian'. Is there a rule for such a useless thing? Do WE NEED a rule? Please... grow up. You make meatballs with tomato sauce, this means you might eat some pasta if you are italian... what stops you to put a couple of balls in the plate?

 

My mother ( a professional italian chef ) used to make Pasta and meatballs for a second course. She then used some of the meatballs tomato sauce for the Pasta. There, she also dropped a couple of meatballs in to push us to eat meat. And finally, if there was some tomato sauce left on the plate, we scooped everything up with a piece of bread... a technique called 'scarpetta'.

 

When I hear people saying 'Spaghetti and Meatballs is not italian' I really wanna hit them hard with a roasted chicken.

 

 

 

Just like any good Italian recipe, there is still some room for interpretation so that no one can duplicate it precisely. Sometimes I wish I were everyone were even little partially Italian, so that you could have learned the secrets from my mother even if that heritage comes with a side of crazy.

    500gr Minced Meat

     

    150gr Parmiggiano Reggiano

     

    4 Eggs

     

    100gr Milk

     

    100gr Dried Bread Crumbs

     

    75gr Grated Onion

     

    50gr Finely Diced Fresh Garlic

     

    50gr Finely Chopped Fresh Italian Parsley Leaves

     

    50gr Finely Chopped Fresh Basil Leaves

     

    Salt
    ( a pinch )

     

    Nutmeg
    ( a pinch )

     

    Black Pepper
    ( a pinch )




  • Imperial:

     

     

     

    1.1lb Minced Meat

     

    5.2oz Parmiggiano Reggiano

     

    4 Eggs

     

    3.5oz Milk

     

    3.5oz Dried Bread Crumbs

     

    2.6oz Grated Onion

     

    1.7oz Finely Diced Fresh Garlic

     

    1.7oz Finely Chopped Fresh Italian Parsley Leaves

     

    1.7oz Finely Chopped Fresh Basil Leaves

     

    Salt
    ( a pinch )

     

    Nutmeg
    ( a pinch )

     

    Black Pepper
    ( a pinch )




  • Cups:

     

     

     

    2 cups Minced Meat

     

    1 cup Parmiggiano Reggiano

     

    4 Eggs

     

    0.3 cup Milk

     

    1 cup Dried Bread Crumbs

     

    3.5 tablespoons Grated Onion

     

    1.5 tbsp Finely Diced Fresh Garlic

     

    3 tablespoons Finely Chopped Fresh Italian Parsley Leaves

     

    3 tablespoons Finely Chopped Fresh Basil Leaves

     

    Salt
    ( a pinch )

     

    Nutmeg
    ( a pinch )

     

    Black Pepper
    ( a pinch )




 

 

 

Directions:


 

01 - Preheat oven to 180C / 350F.

 

02 - Spread some Olive Oil on a baking sheet.

 

03 - Mix all the ingredients thoroughly in large bowl.

 

04 - If the mixture seems a little loose add more bread crumbs.

 

05 - Now, roll the Meatballs loosely about the size of a golf ball and place the on baking sheet.

 

06 - Place into the preheated oven for approximately 35 to 40 minutes. Serve.





Notes:


 

- Feel free to mix the Meatballs with the Tomato Sauce you like.
