TRADITIONAL ITALIAN RECIPE: Caprese Salad or Insalata Caprese is a very simple salad from Italy consisting of fresh mozzarella cheese, tomatoes, basil and olive oil and seasoned with salt and pepper. I think the beauty of this salad is its simplicity and the fact that it consists of the Italian flag colors.
Although I'm not a great fan of Cheese, Caprese Salad is one of my favourite Salads and it is one of those food which is timeless and a crowd pleaser. Personally, I reckon it is simplicity at its best and I love the fact that it is not shy in terms of flavour, colour and aroma.
Not only its simplicity makes this the ideal fuss free appetizer or a light meal at home, you can also whip this up just as easy in the kitchen at your office.
A balsamic reduction all it is is just cooking the balsamic vinegar for a while and it will reduce to less than half and thicken in the process, so the flavor is more concentrated.
So, if you need a no-cook, make-ahead hors d'oeuvre, I suggest you to try this Recipe out.
As far as the mozzarella goes, I chose the ciliegine, or cherry-sized, mozzarella balls. Depending on the brand available at your grocery store, you may find slightly larger sizes, or smaller, such as the perline variety. Personally I liked using mozzarella that was about the same size as the cherry tomato, so I tried to match them up. Less mess.

Directions:
01 - Rinse and pat dry the Cherry Tomatoes.
02 - Remove all stems.
03 - Cut off the top of the Cherry Tomatoes.
04 - Scoop out the seeds.
05 - Depending on the size of your Cherry Tomatoes cut the Mozzarella into bite size pieces that will fit nicely in to the Tomatoes.
06 - Rinse and gently pat dry the Basil. If too big, cut the Basil in Half.
07 - Place the Basil leaves right in the middle of each Tomato, gently pushing it to the bottom of the tomato.
08 - Top off with a mini Mozzarella balls or a piece of Mozzarella.
09 - Season to taste with Kosher Salt.
10 - Drizzle with Olive Oil and Balsamic Vinegar. Serve chilled.
Notes:
- Baslamic Vinegar ( the dark one ) is the perfect touch for this dish.
