TRADITIONAL ITALIAN RECIPE: If you want more flavour out of your handmade gnocchi, why not trying this Basil-enhanced recipe. The gnocchi get a ton of flavour from the basil rooted inside.

This Basil Gnocchi recipe requires a simple tomato sauce filled with simple ingredients. This sweet and rich sauced gnocchi meal will make a perfect dinner, no matter what season or day.

REMEMBER: only use fresh ingredients.

    Gnocchi:

    1kg Potatoes

     

    300gr Flour

     

    1 Egg

     

    Pinch of Salt

     

    50gr Sweet Basil

    ( or regular Basil )

     

    For the Tomato Sauce:

     

    1L. Tomato Sauce
    ( Passata or Chopped Tomatoes )

     

    Sweet Basil
    ( Fresh or Dry )


    Extra Virgin Olive Oil

     

    Garlic
    ( or mix Garlic and Onion )




  • Imperial:

     

     

     

    Gnocchi:

    2.2lb Potatoes

     

    10.5oz Flour

     

    1 Egg

     

    Pinch of Salt

     

    1.76oz Sweet Basil

    ( or regular Basil )

     

    For the Tomato Sauce:

     

    2.2lb Tomato Sauce
    ( Passata or Chopped Tomatoes )

     

    Sweet Basil
    ( Fresh or Dry )


    Extra Virgin Olive Oil

     

    Garlic
    ( or mix Garlic and Onion )

    8 Potatoes

     

    About 3 cups Flour

     

    1 Egg

     

    Pinch of Salt

     

    Bunch of Sweet Basil

    ( or regular Basil )

     

    For the Tomato Sauce:

     

    About 4 cups of Tomato Sauce
    ( Passata or Chopped Tomatoes )

     

    Sweet Basil
    ( Fresh or Dry )


    Extra Virgin Olive Oil

     

    Garlic
    ( or mix Garlic and Onion )




 

 

 

Directions:

01 - Start cooking the tomato sauce. In a large pan saute the Garlic over medium heat for a couple fo minutes.
Alternatively, add a glass of Water to the Oil if you don't like frying.

02 - Pour in the Tomato Sauce of your choice and boil for about 15 minutes adding Water if required..

03 - Add Sweet Basil and Salt and Pepper to taste and keep cooking for another 5 minutes.

 

 

 

04 - Boil the Potatoes in their skins or chopped.

 

05 - After about 25 minutes turn the heat off and tip them into a colander to drain.

 

06 - While still hot peel off the skin.

 

07 - Pass the Potatoes through a potato ricer.

 

08- Let the mash cool slightly and then sprinkle over the Flour, add 2 generous pinches of Salt, and finally pour in the Egg.





09 - Use your hands to mix it together. After a minute or two it will form into a Dough. Knead lightly. When it reaches a pliable consistency, it's ready.

 

10 - Chop the Basil.

11 - Put the chopped Basil into the Dough and knead to combine.

12 - Sprinkle the surface with Flour. Slice a fist-sized piece from the Dough ball and roll out into lengths that are about 3cm / 1.1in thick.





13 - Use a flexible knife to cut off 2cm / 0.8in pieces off the roll you've just made.

14 - You can either leave the Gnocchi smooth or give the classic gnocchi-shape by pressing the Gnocchi against the prong of a fork and rolling it off.





15 - Place the Gnocchi onto a tray, leaving a space between each piece to prevent them from sticking together.

 

16 - Boil some water in large and deep pan. Add some Salt.

 

17 - When the Gnocchi have all bobbed to the surface, they're ready.

18 - Scoop them out with a sieve, shake off the water and transfer them inside the saucepan containing the Tomato Sauce sauce or on the plates. Serve immediately.

Notes:


 

- The size of the Gnocchi can vary as desired.

 

- You can leave them as they are, even without the lines.

 

- Sprinkle some Flour on and put them in the frige for 24 hours. Remember, Gnocchi contain Eggs, so the sooner you eat them, the better.
