ITALIAN RECIPE: Amaretto is a sweet, almond-flavoured, Italian liqueur. It is made from a base of apricot pits or almonds, sometimes both. I personally don't like alcohol, but if you drink ( or are an alcoholic :D ) this is the cake for you!

 

 

 

The Legend

 

Despite the known history on the introduction and acceptance of almonds into Italian cuisine, newer takes on the meanings and origins have been popularized by the two major brands.

 

Though of sometimes questionable factuality, these tales hold a sentimental place in Saronno culture.

In 1525, a Saronno church commissioned artist Bernardino Luini, one of Leonardo da Vinci's pupils, to paint their sanctuary with frescoes.

 

As the church was dedicated to the Virgin Mary, Luini needed to depict the Madonna, but was in need of a model. He found his inspiration in a young widowed innkeeper, who became his model and (in most versions) lover. Out of gratitude and affection, the woman wished to give him a gift.

 

Her simple means did not permit much, so she steeped apricot kernels in brandy and presented the resulting concoction to a touched Luini.

 

 

 

Almond is one of my favorite flavorings for desserts, especially during the Christmas season. Almond desserts, like this cheesecake and this Almond Cake with Amaretto Filling, seem formal and fancy to me.

 

This rich and decadent Amaretto Cheesecake is perfect for serving during the holidays when most people are willing to consume a few extra calories. Or even after a break-up... totally approved! :D

A topping of sugared almonds gives some crunch and a luscious Amaretto Cream Sauce really rounds out the almond flavor... or Chocolate too. Up to you!


If you wanted to cut down on the steps, this Amaretto Cheesecake is perfectly delicious without any sauce or topping. If you are an alcoholic then, forget the cake and just drink the liquor! AHAHAHA!

    675gr Ricotta Cheese

     

    220gr Caster Sugar

     

    200gr Crushed Biscuits
    ( better to use Digestive Biscuits )

     

    200gr Dark Chocolate
    ( chopped )

     

    4 Eggs
    ( 3 Egg Whites, 4 Egg Yolks )

     

    125ml Sour Cream

     

    125ml Thickened Cream
    ( whipped )

     

    90gr Unsalted Butter
    ( melted )

     

    60ml Amaretto

     

    35gr Cocoa Powder
    ( sifted )

     

    35gr Plain flour

     

    5gr Vanilla Extract

    1.4lb Ricotta Cheese

     

    7.7oz Caster Sugar

     

    7oz Crushed Biscuits
    ( better to use Digestive Biscuits )

     

    7oz Dark Chocolate
    ( chopped )

     

    4 Eggs
    ( 3 Egg Whites, 4 Egg Yolks )

     

    4.4oz Sour Cream

     

    4.4oz Thickened Cream
    ( whipped )

     

    3.1oz Unsalted Butter
    ( melted )

     

    2.1oz Amaretto

     

    1.2oz Cocoa Powder
    ( sifted )

     

    1.2oz Plain flour

     

    0.17oz Vanilla Extract




  • Cups:

     

     

     

    2.8 cups Ricotta Cheese

     

    1 cup Caster Sugar

     

    2 cups Crushed Biscuits
    ( better to use Digestive Biscuits )

     

    1 bar Dark Chocolate
    ( chopped )

     

    4 Eggs
    ( 3 Egg Whites, 4 Egg Yolks )

     

    0.5 cup Sour Cream

     

    0.5 cup Thickened Cream
    ( whipped )

     

    0.4 cup Unsalted Butter
    ( melted )

     

    0.25 cup Amaretto

     

    1 tablespoon Cocoa Powder
    ( sifted )

     

    0.25 cup Plain flour

     

    1 teaspoon Vanilla Extract




 

 

 

Directions:


 

01 - Preheat the oven to 160C / 320F.

 

02 - Grease a 24cm / 10in springform pan.

 

03 - Cover the base and sides of the pan with a double layer of foil.

 

04 - Combine the Biscuit Crumbs, Cocoa and Butter, then spread the mixture over the base and 2cm up the sides of the pan.

 

05 - Process the Egg Yolks, Vanilla and Sugar in a food processor.

 

06 - Add the Ricotta, Sour Cream, Amaretto and Flour, and process until smooth.

 

07 - Place the mixture in a mixing bowl and fold through the Whipped Cream.

 

08 - Beat the Egg Whites until soft peaks form, then fold into mixture, making sure it's well combined.

 

09 - Finally, fold in half the Chocolate.

 

10 - Place in prepared pan, then sit in a deep baking dish.

 

11 - Pour boiling Water into baking dish so it comes halfway up sides of pan.

 

12 - Bake for 1 hour, turn the oven off and leave to cool completely, then refrigerate for a minimum of 1 hour.

 

13 - To serve, place the remaining Chocolate in a bowl over a pan of simmering water ( making sure the bowl doesn't touch water ) and stir until Chocolate melts.

 

14 - Cool slightly, then serve slices of Cheesecake drizzled with the melted Chocolate.

This cake is delicious bu I'd like to try to make one alcohol free. Can you make a version without alcohol? Or I just omit it?

I've made this 6 months ago and my hubby still hasn't stopped asking for it. Definitely this is the best cheesecake I've ever made, a little fiddly to create but definately well worth the hassle.
