TRADITIONAL BRITISH RECIPE: Yorkshire Parkin cake is essentially the Northern English form of gingerbread. This is the traditional recipe for Yorkshire Parkin, although the recipe changes from area to area.

 

Different parkins are characterized by where they are made, and Yorkshire Parkin is one of the most famous, made using oats.

 

Yorkshire Parkin is eaten on Bonfire Night, November 5th, celebrating the famous failure of Guy Fawkes to blow up the Houses on Parliament in 1605. Guy Fawkes, for those of you that don't know, was a Yorkshireman. Today is the face of the humanitarian hacking group Anonymous.

 

This Parkin Recipe is easy to make and creates a lovely, moist sticky cake - though you can eat the cake almost immediately it gets stickier if you wrap and store it for several days.

 

The other beauty of the cake is it keeps really well in an airtight tin, can be eaten as a cake or warm as a pudding with a dollop of custard and make an interesting alternative to sponge cake in a trifle, giving it a more autumny flavour than a light summer trifle.

    100gr Butter

    ( Sugar )

     

    100gr Dark Soft Brown Sugar

     

    175gr Molasses

    ( Black Treacle )

     

    225gr Plain Flour

     

    2gr Bicarbonate of Soda

     

    15gr Ground Ginger

     

    2gr Nutmeg

     

    1gr Finely Crushed Black
    Pepper

     

    125gr Coarse Oatmeal

     

    50ml Milk

     

    50gr Chopped Mixed Peel




  • Imperial:

     

     

     

    3.5oz Butter

    ( Sugar )

     

    3.5oz Dark Soft Brown Sugar

     

    6.aoz Molasses

    ( Black Treacle )

     

    7.9oz Plain Flour

     

    0.1oz Bicarbonate of Soda

     

    0.5oz Ground Ginger

     

    0.1oz Nutmeg

     

    0.03oz Finely Crushed Black
    Pepper

     

    4.4oz Coarse Oatmeal

     

    1.7oz Milk

     

    1.7oz Chopped Mixed Peel




  • Cups:

     

     

     

    0.5 cup Butter

    ( Sugar )

     

    0.5 cup Dark Soft Brown Sugar

     

    0.5 cup Molasses

    ( Black Treacle )

     

    1 cups Plain Flour

     

    0.5 tsp Bicarbonate of Soda

     

    4 tsp Ground Ginger

     

    0.5 tsp Nutmeg

     

    0.25 tsp Finely Crushed Black
    Pepper

     

    1.2 cups Coarse Oatmeal

     

    0.25 cup Milk

     

    0.3 cup Chopped Mixed Peel




 

 

 

Directions:


 

01 - Butter and line a 20cm / 7.8in cake tin with greaseproof paper.

 

02 - Preheat the oven to 160C / 320F / Gas 3.

 

03 - Beat Butter and Sugar together until smooth.

 

04 - Add Treacle to the Butter/Sugar Mixture and beat until wel combined.

 

05 - One by one, sift in Flour, Bicarbonate of Soda, Spices, Oatmeal and Milk and mix well.

 

06 - Finally add the Mixed Peel and mix just emough to incorporate the Peel.

 

07 - Spoon the Mixture into the tin.

 

08 - Bake for an hour or until a skewer comes out clean. Serve warm or cold.
