TRADITIONAL BRITISH RECIPE: These Brandy Snaps won't make a dinner, but they would make a great dessert for a dinner party.
The recipe is embarrassing easy, but you need a cannoli tube to make them. If you don't have it, you can oil the handle of a clean wooden spoon or the neck of a bottle of wine. But make sure you use clean stuff.
Brandy Snaps are the british response to the Sicilian Cannoli.

0.5 cup Butter
0.5 cup Caster Sugar
2 tablespoons Golden Syrup
0.5 cup Plain Flour
1 teaspoon Brandy
1 teaspoon Ground Ginger
Finely Grated Zest of 1 Lemons
Ground Cinnamon
For the Filling:
0.6 cup Whipping Cream
2 teaspoons Brandy
Directions:
For the Snaps:
01 - Preheat the oven to 180C / 356F.
02 - Line two baking trays with greaseproof paper.
03 - In a saucepan, melt Butter, Sugar and Golden Syrup and leave to cool a little.
04 - Stir in the Butter Mixture the Flour, the grated Lemon Zest, Brandy and all Spices.
05 - Drop 8 small spoonfuls of Mixture onto each baking tray ( spaced well apart, as they will spread in the oven ).
06 - Bake for about 6 - 8 minutes.
07 - Once the Mixture has spread out to lacy, golden discs, remove them from the oven and leave to cool for a minute before shaping.
08 - Use a Cannoli Tube to shape the Brandy Snaps and leave on a rack to cool.
For the Filling:
09 - Using an Electric Mixer, whisk the Double Cream and Brandy to soft billowing peaks.
10 - Spoon into a piping bag and fill up each Snap. Serve.
