TRADITIONAL BRITISH RECIPE: Everyone loves lemon drizzle cake. This recipe will show you how easy is to make it.

 

Lemon Drizzle Cake is a classic cake, eaten at any time of the year, but it is especially good in the Spring and Summer.

 

Lemon Drizzle Cake is a traditional cake made in many parts of England for Easter Sunday.

 

 

 

Tips:

 

The trick to this cake is not over-beating the cake batter when mixing, it needs to be light, so use a ‘folding’ technique rather than a mixing one.

 

Buy good quality un-waxed organic lemons for this cake, not the ‘waxy’ shiny ones, as we need the skin for the zest.

Ingredients:

    125gr Margarine

    ( or Butter )

    175gr Caster Sugar

    175gr Self Raising Flour

    4gr Baking Powder

    2 large free-range Eggs

    1 large or 2 small Lemons

    ( grated rind of )

    65ml Milk



    Lemon Syrup:

    40gr Granulated Sugar

    Juice of Lemons used for rind




  • Imperial:

     

     

     

    40oz Margarine

    ( or Butter )

    60oz Caster Sugar

    60oz Self Raising Flour

    0.14oz Baking Powder

    2 large free-range Eggs

    1 large or 2 small Lemons

    ( grated rind of )

    2.5oz Milk



    Lemon Syrup:

     

    1.4oz Granulated Sugar

    Juice of Lemons used for rind




  • Cups:

     

     

     

    0.5 cup Margarine

    ( or Butter )

    0.5 cup Caster Sugar

    0.5 cup Self Raising Flour

    1 teaspoon Baking Powder

    2 large free-range Eggs

    1 large or 2 small Lemons

    ( grated rind of )

    0.25 cup Milk



    Lemon Syrup:

    3 tbsp Granulated Sugar

    Juice of Lemons used for rind




 

 

 

Directions:


 

01 - Grease and line a 1kg / 2.2lb loaf tin and preheat the oven to 180C / 356F / Gas mark 4.

 

02 - One by one, using a food processor, mix all ingredients until you obtain a really smooth and quite runny Batter.

 

03 - Pour the Mixture into the pre-greased loaf tin and bake in the preheated oven for about 45 minutes.

 

04 - While the Cake bakes, dissolve the Granulated Sugar in the Lemon Juice.

 

05 - Once the cooking time is up, make sure the Cake is ready by pushing a skewer into the centre. If it comes out clean, it’s done.

 

06 - Turn out and place it onto a cooling rack.

 

07 - Pierce the Cake all over with the skewer and spoon the lemon syrup all over the cake until you have used all the syrup... it will set when it is cold. Serve.
