British Banoffee Pie Recipe

TRADITIONAL BRITISH RECIPE: the classic Banoffee Pie recipe uses condensed milk to make an easy and quick caramel from scratch.

 

The recipe is much easier to make than you may think. It really takes about 2 minutes of hard work.

 

The base is basically made from 2 ingredients: digestive biscuits and butter. Not something you would eat if you are planning to lose weight... or get old.

 

BUT, once you've tried this dessert, you'll want to make it time and time again. Love bananas? Love toffee? Well, you're going to love this classic British cake recipe.

    For the Caramel:

     

    400gr Condensed Milk

     

    100gr Butter

    ( Unsalted )

     

    100gr Caster Sugar

     

     

     

    For the Pie:

     

    250ml Double Cream

    ( whipped until soft peaks form when the whisk is removed )

     

    230gr Pecans

    ( halved )

     

    3 large Bananas

    ( chopped )

     

    150gr Digestive Biscuits

    ( crushed )

     

    75gr Butter

    ( melted )

     

    Cocoa Powder

    ( for dusting )

     

     

     

    For the Caramel Sauce:

     

    125gr Butter

    ( unsalted )

     

    125ml Coconut Milk

     

    125gr Soft Light Brown Sugar




  • Imperial:

     

     

     

    For the Caramel:

     

    14oz Condensed Milk

     

    3.5oz Butter

    ( Unsalted )

     

    3.5oz Caster Sugar

     

     

     

    For the Pie:

     

    10.5oz Double Cream

    ( whipped until soft peaks form when the whisk is removed )

     

    8oz Pecans

    ( halved )

     

    3 large Bananas

    ( chopped )

     

    5.2oz Digestive Biscuits

    ( crushed )

     

    3oz Butter

    ( melted )

     

    Cocoa Powder

    ( for dusting )

     

     

     

    For the Caramel Sauce:

     

    4oz Butter

    ( unsalted )

     

    4oz Coconut Milk

     

    4oz Soft Light Brown Sugar




  • Cups:

     

     

     

    For the Caramel:

     

    1.3 cups Condensed Milk

     

    0.5 cup Butter

    ( Unsalted )

     

    0.5 cup Caster Sugar

     

     

     

    For the Pie:

     

    1 cup Double Cream

    ( whipped until soft peaks form when the whisk is removed )

     

    2 cups Pecans

    ( halved )

     

    3 large Bananas

    ( chopped )

     

    1 pack regular Digestive Biscuits

    ( crushed )

     

    0.3 cup Butter

    ( melted )

     

    Cocoa Powder

    ( for dusting )

     

     

     

    For the Caramel Sauce:

     

    0.6 cup Butter

    ( unsalted )

     

    0.5 cup Coconut Milk

     

    0.75 cup Soft Light Brown Sugar




 

 

 

Directions:


 

For the Caramel:

 

01 - Melt Butter and Sugar into a saucepan over a low heat stirring until the sugar has completely dissolves.

 

02 - Add the Condensed Milk and slowly bring to the boil. Stir continuously until the Caramel has formed. Remove from the heat and allow to cool.

 

 

 

For the Banoffee Pie:

 

03 - Crush the Biscuits and mix in bowl together with half quantity of Pecans and Butter.

 

04 - Move the Pie Mixture to a 25cm / 10in cake mould, pressing evenly into the base.

 

05 - Add the chopped Bananas to the Caramel Mixture and carefully mix well.

 

06 - Spread the Mixture over the Pie base.

 

07 - Place in the fridge to cool for 30 minutes.

 

08 - Remove from the fridge and spread the Whipped Cream evenly over the top of the Banoffee layer.

 

09 - Dust with Cocoa Powder and place the remaining Pecans over the top.

 

 

 

For the Caramel Sauce:

 

10 - Place Butter, Sugar and Coconut Milk into a second clean saucepan over a medium heat. Bring to the boil and cook for about 3 minutes or until it forms a thick, light golden-brown sauce.

 

 

 

To Serve:

 

11 - Cut out slices of Banoffee Pie and pour over the Caramel Sauce.
