Wow, this was AMAZING! I did do a few modifications - I used closer to 1.5 cups of wine, and I did add some soaked raw cashews (about 1/3 cup) to the mixture when I pureed. This is perfection.

Look at the colour wow! I absolutely love this dish. I love carrots, I normally eat them raw but I'd definitely try this one.
