TRADITIONAL JAPANESE RECIPE: Matcha lovers, rejoice! This creamy and flavorful matcha pudding is a dessert that will take your taste buds on a trip to Japan with just one bite.

Throughout the year, we receive countless requests for Japanese desserts, especially those that include matcha (green tea) as an ingredient. Matcha has been a beloved part of Japan's tea culture for centuries, and it's no wonder why so many people crave its unique flavor and health benefits. This Matcha Pudding recipe is a satisfyingly simple dessert that can be made quickly and easily with just a few ingredients, making it a perfect option for those who are new to making pudding-based desserts.

This beloved dessert is enjoyed all year round in Japan and is the perfect sweet treat to cap off a meal. Matcha has a long history in Japanese culture and was first introduced by Zen monks in the 12th century as a way to stay alert during long meditation sessions. Since then, matcha has become a cultural icon of Japan and is celebrated in many forms, including as a dessert.

Fortunately, making this pudding is a breeze. With just a few hours before your guests arrive, you can whip up this dessert and still have enough time to chill it in the fridge. The recipe calls for only a few simple ingredients, making it a perfect option for those who are new to making pudding desserts.

For our vegetarian and vegan readers, you can substitute Kanten Gelatin Powder, which is plant-based. Typically, 1 teaspoon of Gelatin Powder is equivalent to about half a teaspoon of Kanten Powder. With this recipe, you can enjoy the delicious taste of matcha pudding without sacrificing your dietary preferences.

    300g Whole Milk

    50g Granulated Sugar

    30g Hot Water

    5g Gelatin Sheets

    9g Matcha Powder



    Optional:

    Sweet Red Bean Paste (anko)

    Whipped Cream

    10.58oz Whole Milk

    1.76oz Granulated Sugar

    1.05oz Hot Water

    0.17oz Gelatin Sheets

    0.31oz Matcha Powder



    Optional:

    Sweet Red Bean Paste (anko)

    Whipped Cream




  • Cups:

     

     

     

    1 cup + 4 tablespoons Whole Milk

    0.25 cup Granulated Sugar

    2 tablespoon Hot Water

    2 Gelatin Sheets

    3 teaspoons Matcha Powder



    Optional:

    Sweet Red Bean Paste (anko)

    Whipped Cream




 

 

 

Directions:


 

01 - Begin by sifting the Matcha Powder into a medium-sized bowl. For best results, you can use a bamboo tea whisk to remove any remaining lumps from the powder. Set the bowl aside.

02 - In another bowl, mix Hot Water and Gelatin together. For specific instructions on how to do this, please refer to the NOTES section. Set aside.



03 - Heat up the Milk in a small saucepan, but make sure not to let it boil. Once you see small bubbles forming around the edges of the saucepan, turn off the heat.

04 - Add Granulated Sugar to the saucepan with Milk, and whisk well to ensure the Sugar is dissolved.



05 - Take a small amount of the Milk mixture and add it to the Matcha Powder in the bowl prepared in STEP 01. Using a bamboo tea whisk or a small whisk, mix the ingredients together until the mixture is smooth and there are no lumps of dry matcha powder left. This is an important step.

06 - Pour the Matcha mixture into the saucepan with the milk, and whisk the two mixtures together.

07 - Add the Gelatin mixture prepared in STEP 02 to the saucepan, and whisk everything well.

08 - Divide the mixture into 4 cups or glasses, and let it chill in the refrigerator for 2 hours until it has solidified. Once it has set, add whipped cream or anko on top, and sprinkle Matcha powder for decoration. Serve the pudding chilled.





Notes:


 

- STEP 02: If you plan to use Gelatin Sheets, begin by cutting them into smaller pieces. Make sure to use a heat-resistant bowl for melting the gelatin since you will be using the double boiler method. This means you'll be placing the bowl with the Gelatin inside a saucepan with some water in it. The heat from the simmering water will gently melt the Gelatin, resulting in a smooth and consistent texture for your pudding.
