TRADITIONAL JAPANESE RECIPE: The key to have a good Matcha flavor in the cake is to use enough Matcha powder. Because its aroma, when mixed with other ingredients, is somewhat delicate, it may dissipate as it’s baked. You also want the deep green color for the look of this cake, and the amount we used was sufficient to reach the goal.
Matcha powder, even in Japan, is quite pricey. 40 grams of powder costs about 10-20 dollars.
Matcha tea contains a unique, potent class of antioxidant known as catechins, which aren’t found in other foods. In particular, the catechin EGCg (epigallocatechin gallate) provides potent cancer-fighting properties.
Most importantly, EGCg and other catechins counteract the effects of free radicals from the likes of pollution, UV rays, radiation, and chemicals, which can lead to cell and DNA damage. Since over 60% of the catechins in matcha are actually EGCg, a daily matcha regimen can help restore and preserve the body’s integral well-being and balance.

1.25 cups Sugar
1 cup Butter
( room temperature )
1.6 cups Cake Flour
3 tablespoons Water
3 tablespoon Matcha Powder
0.5 teaspoon Salt
Directions:
01 - Preheat the oven at 175C / 350F.
02 - Grease a 22x12cm ( bottom 20x10cm ) / 9"x5" (bottom 8"x4") loaf pan.
03 - In a medium bowl, mix Eggs, Yolks, and Water.
04 - Sift the Cake Flour, Matcha Powder, and Salt together into another bowl. Set aside.
05 - Put the soft Butter in a bowl of a stand mixer and beat with paddle for 2 minutes.
06 - Slowly add Sugar in 4-5 parts, beating for 5 minutes until the color turns very light and it becomes fluffy.
07 - Now slowly add the Egg mixture, pouring in 4-5 parts taking another 5 minutes.
08 - Fold in the Flour mixture in 4-5 parts by hand.
09 - Pour the Batter into the prepared pan, flatten the surface with a spatula, and bake in the oven about 1 hour.
10 - Cool slightly and remove the Cake from the pan cooling it completely on a cooling rack.
