    1080ml Whole Milk

    360ml Heavy Whipping Cream
    (36% to 47% Milkfat)

    300g Sugar

    60g Matcha
    (Green Tea Powder)

    1g Kosher Salt



    Tools Needed:

    Ice Cream Machine

    2.38lb Whole Milk

    12.69oz Heavy Whipping Cream
    (36% to 47% Milkfat)

    100.58oz Sugar

    2.11oz Matcha
    (Green Tea Powder)

    0.03oz Kosher Salt



    Tools Needed:

    Ice Cream Machine




  • Cups:

     

     

     

    4.2 cups Whole Milk

    1.5 cups Heavy Whipping Cream
    (36% to 47% Milkfat)

    2.5 cup Sugar

    0.5 cup Matcha
    (Green Tea Powder)

    0.25 teaspoon Kosher Salt



    Tools Needed:

    Ice Cream Machine




 

 

 

Directions:


 

01 - Combine Whole Milk and Heavy Whipping Cream in a medium pot over low heat, making sure to never let the Mixture boil or even make the smallest of the bubbles.

02 - Add Salt and Sugar to the Mixture and whisk until both Salt and Sugar are well dissolved.

03 - Turn off the heat.



04 - Put the Matcha Powder inside a small medium bowl.

05 - Add 2 or 3 spoons of the mixture prepared in STEP 02 and stil well until lump free.

06 - Keep adding little Mixture to the Matcha until it goes from a paste to a more liquid batter-like mixture.

07 - Slowly transfer the Matcha mixture into the pot, together with the rest of the Milk mixture, and stir together until smooth.

08 - Using a fine-mesh sieve placed over a bowl or another pot, filter all the Matcha lumps left.

09 - Allow the Mixture to cool. Cover the bowl with cling film and chill in the fridge for no less than 4 hours.



10 - Pour the mixture into your Ice Cream Mixture and churn according to the manufacturer's instructions.

11 - Transfer the Ice Cream into an airtight container and freeze for at least 4 hours.





Notes:


 

- The Ice Cream can last for up to 2 weeks.

- If there are ice crystals on the surface... throw it away.

- Matcha ice cream can be a good source of antioxidants and contains less sugar and fat than traditional ice cream. However, it still contains high amounts of calories and sugar, so it should be consumed in moderation as part of a balanced diet.
