    TRADITIONAL JAPANESE RECIPE: Have you ever drunk Matcha Tea? Is a bit like Green Tea but so much better, as it doesn't have that bitterness Green Tea is famous for.

    Dounghnuts are quite famous in Japan, thanks to shops like Mr. Donuts, a chain present in almost all stations in Tokyo.

    One thing this chain does is backing a lot of Doughnuts. Baked Doughnuts do not taste like fried Doughnuts, so don't expect that. The problem is that you don't really want to deep fry Matcha, do you? The texture is more like a Cake and it's very moist.

    Ingredients:

      95gr Cake Flour

      80ml Milk

      1 Large Egg
      ( beaten )

      35gr Unsalted Butter
      ( melted )

      25gr Sugar

      21gr Honey

      6gr Matcha

      2.3gr Baking Powder

      1.5gr Kosher Salt
      ( or Sea Salt - half for table salt )



      For the Glaze:

      60gr Powdered Sugar

      15gr Milk

      1.5gr Matcha Powder




    • Imperial:

       

       

       

      3.35oz Cake Flour

      2.82oz Milk

      1 Large Egg
      ( beaten )

      1.23oz Unsalted Butter
      ( melted )

      0.88oz Sugar

      0.74oz Honey

      0.21oz Matcha

      0.08oz Baking Powder

      0.05oz Kosher Salt
      ( or Sea Salt - half for table salt )



      For the Glaze:

      2.11oz Powdered Sugar

      0.52oz Milk

      0.05oz Matcha Powder




    • Cups:

       

       

       

      0.75 cup Cake Flour

      0.33 cup Milk

      1 Large Egg
      ( beaten )

      2 tablespoons Unsalted Butter
      ( melted )

      2 tablespoons Sugar

      1 tablespoon Honey

      1 tablespoon Matcha

      0.5 teaspoon Baking Powder

      0.25 teaspoon Kosher Salt
      ( or Sea Salt - half for table salt )



      For the Glaze:

      0.5 cup Powdered Sugar

      1 tablespoon Milk

      0.25 teaspoon Matcha Powder




     

     

     

    Directions:


     

    01 - Preheat oven to 220C / 425F.

    02 - Lightly coat your donut pan with some cooking spray or just grease with some Canola Oil.



    03 - Melt the Butter

    04 - Put Flour, Sugar, Baking Powder, Salt and Matcha in a fine strainer and sift them over a large bowl.



    05 - Beat the Egg.

    06 - Add the beaten Egg to the Bowl with all the dry Ingredients.

    07 - Add also Milk, Melted Butter and Honey to the mixing bowl, and now whisk everything until well incorporated.

    08 - Fill each mold about 3/4 full.

    09 - Bake the Doughnut for about 8 minutes, or until an inserted toothpick comes out clean.

    10 - Let cool in the pan for a few minutes.

    11 - Transfer the Doughnuts to a wire rack to cool completely.



    For the Matcha Glaze:

    12 - Put Powdered Sugar and Matcha Powder in a fine strainer and sift them over a small Doughnut-Sized Bowl.

    13 - Whisk in the Milk until smooth.

    14 - Dip each Doughnut in the Glaze and return them back on the wire rack to allow the excess Glaze to drip off and dry.





    Notes:


    - STEP 08: Use a pastry bag fitted with a round tip (or a large Ziploc bag with one corner snipped off) to pipe the batter into the donut mold.
