    You might find this Teriyaki Recipe to be slightly different from the ones you found online already. The reason is because everyone keeps modifying it to a level it's actually hard today to find the traditional Teriyaki Chicken recipe.

    With this Chicken Teriyaki Sauce you won't need the bottled Teriyaki Sauce. Everything homemade.

    If you love Teriyaki Sauce you can double the amounts and make the juicier sweetiest glaze.

      1kg Chicken Thighs
      ( boneless and skin-on )

      60g Sake

      2 knobs of Ginger
      (2.5cm each)

      30g Onion

      28.5g Neutral-Flavored Oil
      ( canola, rice bran, vegetable... )
      For Step 07

      10g Neutral-Flavored Oil
      ( canola, rice bran, vegetable... )
      For step 13

      Kosher Salt

      Freshly Ground Black Pepper



      For the Teriyaki Sauce:

      66.4g Soy Sauce

      60gr Water

      30g Mirin

      30g Sake

      25g Sugar

      1.05oz Onion

      1oz Neutral-Flavored Oil
      ( canola, rice bran, vegetable... )

      0.35oz Neutral-Flavored Oil
      ( canola, rice bran, vegetable... )

      Freshly Ground Black Pepper



      For the Teriyaki Sauce:

      2.34oz Soy Sauce

      2.11oz Water

      1.05oz Mirin

      1.05oz Sake

      0.88oz Sugar




    • Cups:

       

       

       

      4 large pieces of Chicken Thighs
      ( boneless and skin-on )

      4 tablespoons Sake

      2 knobs of Ginger
      (2.5cm / 1in each)

      Half Onion

      2 tablespoons Neutral-Flavored Oil
      ( canola, rice bran, vegetable... )
      For Step 07

      2 teaspoons Neutral-Flavored Oil
      ( canola, rice bran, vegetable... )
      For step 13

      Kosher Salt

      Freshly Ground Black Pepper



      For the Teriyaki Sauce:

      4 tablespoons Soy Sauce

      4 tablespoons Water

      2 tablespoons Mirin

      2 tablespoons Sake

      2 tablespoons Sugar




     

     

     

    Directions:


     

    01 - Grate Ginger and Onion.

    02 - Combine both grated Ginger and Onion in a large bowl.

    03 - Now, combine all the ingredients for the Teriyaki Sauce in the bowl with the grated Ginger and Onion, and mix well.



    04 - Now, start preparing the chicken. Prick both sides of the Chicken with a fork, this will help the Chicken absorbing all the flavour.

    05 - Lightly season the Chicken with some Salt and Pepper.

    06 - Marinate the Chicken for about 3 hours in the fridge inside the bowl previously prepared.



    07 - Heat the Oil over medium heat in a large frying pan.

    08 - Before placing the Chicken pieces in the pan, remove as much marinated sauce as possible to avoid it from burning while cooking the Chicken.

    09 - Cook the Chicken from the side of the skin (if you have decided to leave it on), for about 3-5 minutes. Once the skin has turned brown, flip the Chicken on the other side.

    10 - Once you've turned the Chicken on the other side, quickly add the Sake and cover with lid. Steam over low heat for about 10 minutes.

    11 - Once the Chicken is cooked, transfer it on to a plate.

    12 - Using some kitchen paper, wipe the grease from the pan



    13 - Using the same pan, over medium heat, heat the remaining oil.

    14 - Put the Chicken back in the pan, always skin side down, and cook the Chicken for an additional few minutes or until brown.

    15 - Flip the Chicken on the other side and pour all over the Teriyaki Sauce still into the bowl, and cook until the sauce is reduced by about half.

    16 - As soon as Sake and Mirin has evaporated and the Sugar is crystallizing, and therefore the sauce has thickened, turn off the heat.

    17 - Either transfer the Chicken on a chopping board and cut everything into bite-sized pieces... or serve it the way it is, pouring the left over sauce that sits in the frying pan.





    Notes:


     

    - If you've bought thick pieces of Chicken, flatten them with a meat mallet.

    - If your Chicken has lots of skin and fat, ,feel free to cut it off.

    - STEP 08: Use a splatter screen. Oil will splatter... be careful.

    - STEP 15: frequently spoon the sauce over the Chicken.
