TRADITIONAL JAPANESE RECIPE: If you're in the mood for a delicious and satisfying meal, look no further than traditional Japanese fried rice, or Yakimeshi. This dish has a rich history and is a staple of Japanese cuisine, dating back to the Edo period (1603-1868).

To make Yakimeshi, you'll need cooked rice, eggs, soy sauce, vegetables, and protein of your choice. It's important to use cold, cooked rice to ensure the dish has the characteristic texture and flavor. When stir-frying the ingredients, be sure to work quickly over high heat to prevent sticking and burning.

One key difference between Yakimeshi and Chinese fried rice, or Chahan, is the type of rice used. Yakimeshi typically uses shorter grain rice, while Chahan uses longer grain rice. Additionally, Yakimeshi incorporates Japanese flavors such as soy sauce and sake, while Chahan uses Chinese flavors such as oyster sauce and sesame oil.

Interestingly, there are also some legends associated with Yakimeshi. One legend states that during the Edo period, a samurai ordered a bowl of rice from a restaurant but didn't have enough money to pay for it. The restaurant owner suggested frying the rice with some soy sauce and egg, creating Yakimeshi. The samurai loved the dish and paid for it with a valuable sword, which the restaurant owner later returned, feeling it was too valuable to keep.

    660g Rice
    ( use leftover or fresh dry cooked rice )

    2 Large Egg

    4 to 6 Slices Ham

    53g Vegetable Oil
    ( Sunflower, Canola or any other neutral Oil )

    2 Green Onion
    ( Scallion )

    25gr Soy Sauce



    OPTIONAL:

    Salt and White Pepper
    ( to taste )




  • Imperial:

     

     

     

    1.45lb Rice
    ( use leftover or fresh dry cooked rice )

    2 Large Egg

    4 to 6 Slices Ham

    1.86oz Vegetable Oil
    ( Sunflower, Canola or any other neutral Oil )

    2 Green Onion
    ( Scallion )

    0.88oz Soy Sauce



    OPTIONAL:

    Salt and White Pepper
    ( to taste )




  • Cups:

     

     

     

    3 cups Rice
    ( use leftover or fresh dry cooked rice )

    2 Large Egg

    4 to 6 Slices Ham

    4 tablespoons Vegetable Oil
    ( Sunflower, Canola or any other neutral Oil )

    2 Green Onion
    ( Scallion )

    4 teaspoons Soy Sauce



    OPTIONAL:

    Salt and White Pepper
    ( to taste )




 

 

 

Directions:


 

01 - Use leftover rice or cook new Rice in a rice cooker and keep it warm inside until you're ready to serve. To reach the perfect texture, use less water.



02 - Chop the white part of the Onion into small rings. Transfer to a small bowl or dish and set aside.

03 - Now chop the green part of the Onion diagonally, to make even longer/bigger rings. Transfer to a small bowl or dish and set aside.



04 - Dice the Ham into small 1.5cm / 0.5in pieces.

05 - In another bowl or dish, whisk the Eggs.



06 - Using half amount of the Oil, over medium-high coat a wok or large frying pan.

07 - Add the Ham and the white part of the Onion to the pan and cook for 2-3 minutes.

08 - At this point, you can add the Eggs, and cook well.



09 - Now, add the Rice and pour on top the remaining half of the Oil. Using a spatula of wooden spoon, slice the Rice breaking all the clumps, without mashing it. While you separate all the Rice mix all the ingredients already in the pan. This process could take anything between 5 to 10 minutes. Make sure everything is well combined with no clumps.



OPTIONAL: Season the Rice with Salt and White Pepper.



10 - Pour the Soy Sauce over the Rice and mix and toss the fried Rice.

11 - When you're almost done, add half of the amount of the green part of the Onions tossing the Rice for another minute.

12 - Transfer into small bowls, press in, and flip the bowl on to a plate. Pat the bowl, allowing the rice to fall on the plate.

13 - Sprinkle the remaining green Onions on top or leave it as it is. Serve.





Notes:


 

- You can story this Japanese Fried Rice for up to a day.

- We recommend not to freeze.

- Fried Rice is about making it simple. Every family in Japan has its own style. While this is the basic traditional recipe, feel free to twist this recipe up to your liking.
