TRADITIONAL JAPANESE RECIPE: Soba noodles are a popular Japanese dish made from buckwheat flour and are enjoyed for their nutty flavor and smooth texture. Soba noodle salad is a refreshing and nutritious dish that's perfect for a light lunch or dinner, and can be easily customized with a variety of fresh vegetables and herbs.

Soba noodles have a long and fascinating history in Japanese culture. Buckwheat, the primary ingredient in soba noodles, was first introduced to Japan in the 8th century and quickly became a staple crop due to its hardy nature and ability to grow in poor soil. Soba noodles themselves date back to the Edo period in the 17th century, when they were first made by hand and served as a popular street food.

Today, soba noodles are enjoyed in many forms throughout Japan, from the traditional buckwheat soba to newer varieties like Ju-wari soba (100% buckwheat) and Hachi-wari soba (80% buckwheat, 20% wheat flour). Each variety has its own unique flavor and texture, with Ju-wari soba being particularly prized for its nutty taste and delicate texture.

Soba noodles are incredibly versatile and can be used in a variety of dishes beyond the classic soba noodle soup. They can be served cold in salads or hot in stir-fries, and are a great base for a range of sauces and toppings. Some popular dishes include soba noodle salad with sesame dressing, cold soba noodles with dipping sauce, and soba noodle stir-fry with vegetables and tofu.

When cooking with soba noodles, it's important to keep in mind that they cook quickly and can easily become mushy if overcooked. To avoid this, it's recommended to cook them in plenty of boiling water for just 4-5 minutes, then rinse them immediately in cold water to stop the cooking process. Soba noodles also benefit from being gently tossed in a bit of sesame oil or other flavorful sauce to prevent them from sticking together.

    9g Toasted White Sesame Seeds



    FOR THE DRESSING:

    13.3g Neutral Oil
    ( Vegetable Oil, Rice Bran Oil, Canola Oil... )

    60g Honey

    50g Soy Sauce

    27g Roasted Sesame Oil

    0.5g Red Chili Pepper Flakes)

    8.81oz Dried Soba Noodles

    1 Carrot

    3 Green Onions
    ( Scallions )

    2 Cilantro
    ( fresh Coriander )

    0.31oz Toasted White Sesame Seeds



    FOR THE DRESSING:

    0.46oz Neutral Oil
    ( Vegetable Oil, Rice Bran Oil, Canola Oil... )

    2.11oz Honey

    1.76oz Soy Sauce

    0.95oz Roasted Sesame Oil

    0.01oz Red Chili Pepper Flakes)

    3-4 bundles Dried Soba Noodles

    1 Carrot

    3 Green Onions
    ( Scallions )

    2 Cilantro
    ( fresh Coriander )

    1 tablespoons Toasted White Sesame Seeds



    FOR THE DRESSING:

    1 tablespoon Neutral Oil
    ( Vegetable Oil, Rice Bran Oil, Canola Oil... )

    3 tablespoons Honey

    3 Tablespoons Soy Sauce

    3 tablespoon Roasted Sesame Oil

    0.5 teaspoon Red Chili Pepper Flakes)




 

 

 

Directions:


 

01 - Let's start with the Dressing. This is going to be very easy to make. In a small saucepan, combine Vegetable Oil, Sesame Oil, and the Red Chili Pepper Flakes.

02 - Heat the mixture for about 3-5 minutes over low heat without frying, whisking every 30 seconds or so.

03 - After 3-5 minutes, turn off the heat and set aside to cool a little.

04 - Add Honey and Soy Sauce and mix until everything is well combined. Cover with cling film and set aside.



05 - Now, let's move to the Soba Noodles: begin by boiling Water in a large pot, without adding Salt, just plain Water. Follow the package instructions to cook the Soba Noodles, ensuring that they are cooked until they are al dente. Afterwards, drain the Noodles into a colander and rinse them using cold running water to eliminate excess starch and stop the cooking. Ensure that the Noodles are properly drained and then transfer them to a roomy bowl.



06 - Slice the Green Onions into thin rings.

07 - Finely chop the Cilantro.

08 - Thinly slice the Carrot to the same thickness of the Soba Noodles.

09 - Incorporate dressing, sliced Green Onions, finely Chopped Cilantro, and Sesame Seeds into the bowl with the Soba Noodles. Mix well and transfer the Salad into serving dishes.





Notes:


 

- You can serve it chilled or at room temperature

- To preserve the remaining Salad, place it in a tightly sealed container and refrigerate it for a maximum of 3 days.
