    TRADITIONAL JAPANESE RECIPE: This Udon Noodles are soaked into a rich Curry Sauce... a popular recipe in Japan.

    Curry Udon (カレーうどん) is a bit more like Curry Rice but some prefer Udon because of the creamy texture Udon and Curry combine have.

    Japanese Curry is not as Indian Curry, Japanese people tend to alter everything to suit the national food preferences, so also the Curry won't be what you might expect. Japanese Curry is a lot thicker, milder and sweeter than its Indian counterpart.

      1.5L Dashi

      4 Servings Udon Noodles

      350gr Thinly Sliced Pork Poin

      1 Onion

      About 100gr Japanese Curry Roux

      4 Green Onions or Scallions
      ( finely chopped )

      29gr Sake

      28gr Neutral-Flavored Oil
      ( Vegetable, Canola... )

      22gr Soy Sauce

      3lb Dashi

      4 Servings Udon Noodles

      12oz Thinly Sliced Pork Poin

      1 Onion

      About 4oz Japanese Curry Roux

      4 Green Onions or Scallions
      ( finely chopped )

      1oz Sake

      0.98oz Neutral-Flavored Oil
      ( Vegetable, Canola... )

      0.77oz Soy Sauce




    • Cups:

       

       

       

      6 cups Dashi

      4 Servings Udon Noodles

      8-12 Thinly Sliced Pork Poin

      1 Onion

      4 cubes Japanese Curry Roux

      4 Green Onions or Scallions
      ( finely chopped )

      2 tablespoons Sake

      2 tablespoons Neutral-Flavored Oil
      ( Vegetable, Canola... )

      4 teaspoons Soy Sauce




     

     

     

    Directions:


     

    01 - Thinly slice the Onion and Green Onions.

    02 - Heat the Oil in a large pot over medium heat and add the Onion.

    03 - Saute the Onion for about 3 minutes.

    04 - Add the Meat and cook until no longer pink.

    05 - Pour in the Sake and Dashi, and cover wih lid and cook for about 5-10 minutes.

    06 - Check from time to time and skim off the scum and fat from the stock and continue to cook.



    07 - While the first Pot cooks, start boiling a second large pot of Water for the Udon Noodles and cook your Udon Noodles according to the package instruction.



    08 - After 5 minutes, turn the heat to minumum and dissolve the Cubes of the Japanese Curry Roux in the first pot.

    09 - Cook for the remaining 5 minutes, making sure the Curry Cubes have dissolved.

    10 - Turn the heat off, and mix in the Soy Sauce.

    11 - Turn off the heat, cover with lid to keep it warm and keep aside.



    12 - Once the Noodles are ready remove them from the water/drain and divide into four bowls.

    13 - Pour the Curry over the Udon Noodles.

    14 - Top with chopped Green Onion and serve immediately.





    Notes:


    - If you use the already made Curry Roux dissolve completely in a ladle or cup before releasing it to the soup.
