    Indian Naan Recipe ( नान )

    TRADITIONAL INDIAN RECIPE: This Naan recipe will help you making that perfect soft and slightly chewy bread you usually... actually always eat at your local Indian restaurant. Naan is also very popular in India, where it's served in almost all restaurant, althouh it's not made in Indian homes as a staple.

    Forget the yeast, this Naan recipe is the traditional Indian recipe so it will be a bit easier to make. Rhis Naan Bread Recipe uses Baking Powder and Curd for the leavening.

    Naan is normally cooked inside a cylindrical oven made of clay called Tandoor, but you'll be able to make Naan in an oven or on a pan.

    Ingredients:

      250gr All-Purpose Flour
      ( Maida )

      65 - 90gr Water
      ( or add as required )

      60gr Curd or Yogurt

      28gr Oil
      ( Butter can also be used )

      6gr Salt
      ( or to taste )

      4.5gr Baking Powder

      4gr Sugar
      ( or Organic Unrefined Cane Sugar )

      0.30gr Baking Soda



      Optional:

      6gr Onion Seeds
      ( Kalonji, Melon Seeds or Sesame Seeds )

      Butter
      ( for spreading - Ghee or Oil )




    • Imperial:

       

       

       

      8.81oz All-Purpose Flour
      ( Maida )

      2.1 - 3.17oz Water
      ( or add as required )

      2.11oz Curd or Yogurt

      0.98oz Oil
      ( Butter can also be used )

      0.21oz Salt
      ( or to taste )

      0.15oz Baking Powder

      0.14oz Sugar
      ( or Organic Unrefined Cane Sugar )

      0.01oz Baking Soda



      Optional:

      0.21oz Onion Seeds
      ( Kalonji, Melon Seeds or Sesame Seeds )

      Butter
      ( for spreading - Ghee or Oil )




    • Cups:

       

       

       

      2 cups All-Purpose Flour
      ( Maida )

      0.25 - 0.33 cup Water
      ( or add as required )

      0.25 cup Curd or Yogurt

      2 tablespoons Oil
      ( Butter can also be used )

      1 teaspoon Salt
      ( or to taste )

      1 teaspoon Baking Powder

      1 teaspoon Sugar
      ( or Organic Unrefined Cane Sugar )

      1 pinch Baking Soda



      Optional:

      1 tablespoon Onion Seeds
      ( Kalonji, Melon Seeds or Sesame Seeds )

      Butter
      ( for spreading - Ghee or Oil )




     

     

     

    Directions:


     

    01 - In a bowl mix the Fresh Curd or Yogurt
    ( for a vegan naan, use almond or cashew yogurt )

    02 - Add Sugar, Baking Powder and Baking Soda and mix until the Sugar has dissolved.

    03 - Now add All-Purpose Flour and sprinkle the Salt right on top of the Flour.

    04 - Make a well in the center of the bowl and add the Oil and Water and mix.

    05 - Begin to knead until a smooth soft and stretchy Dough has formed.

    06 - Spread some extra Oil all over the Dough and cover it with a moist kitchen towel.

    07 - Cover the bowl with cling film and let the Dough rest for at least 2 hours.



    08 - Once the Naan Dough is ready, make 9 medium-sized balls.

    09 - Sprinkle some Flour on the Dough as well as on the working surface.

    10 - Transfer the first Ball to the working surface and slightly press the palm of your hand over the Dough Ball (OPTIONAL: and sprinkle some Onion Seeds or Sesame Seeds).

    11 - Roll the rolling pinn over the slightly flatten Dough Ball into a 17cm / 7in elongated circle. Roll the top side or gently pull the Dough with your hands to get the Naan pointed edge. The Naan is normally tear-shaped.



    12. Heat a heavy griddle, tawa, frying pan or skillet and keep on medium-high to high flame until hot.

    13 - Place the Naan bread ready on the hot tawa or skillet or griddle.

    14 - Keep the flame to medium-high or high and begin to cook the Naan bread.

    15 - let one side get partly cooked. You will see few air pockets forming on on the Naan.

    16 - Once you start seeing air-pockets forming, flip.

    17 - Now cook the second side on medium-high to high flame. Cook the second side more than the first side. Please note that on a high flame the Naan will get cooked faster.

    18 - Serve the Naan Bread hot or warm with your favorite curry.





    Notes:


    - STEP 05: If the curd is thick, then you may need to add some more Water. In case the Dough looks dry, then add some more Water and knead. If it becomes sticky, then sprinkle some Flour and knead again.
