Directions:



01 - Slice the Onions. Set Aside.



02 - In a pot, over medium heat, melt the Butter in the Olive Oil.

03 - Add in the Onions and keep stiring until translucent and soft, but be careful not to let them brown.

04 - Pour in Beef Broth, Sherry, and Thyme and cook for about 5 minutes.

05 - Now, Season the soup with Salt and Black Pepper and allow it to simmer for 30 minutes to develop its flavors.

06 - While the Soup is simmering, preheat your oven's broiler.

07 - Once the Soup is ready, carefully pour it into heat-resistant serving bowls.

08 - Top each bowl of soup with a slice of French Baguette.

09 - Add a layer of Provolone, Swiss Cheese and Parmesan Cheese on top of the slice of Bread.

10 - Place the heat-resistant bowls on an oven tray and broil them in the preheated oven for about 3 minutes or until the Cheese is melted and slightly browned.

Notes:



- Store in airtight container for up to three days in the fridge or up to 3 months in the freezer.

- If you cannot find Gruyere Cheese, its swiss counterpart ( Swiss Cheese ) will make a perfect alternative.

- Carmelizing the Onions could be an amazing twist... and don't forget to add Red Wine to enrich the Broth.

- Broil the bread with Cheese separately so that the bread doesn't get too soggy, and serve it on the side.
