    British Easy Apple Fruit Cake Recipe

    TRADITIONAL BRITISH RECIPE: This cake was normally made on Christmas, mainly because it has all the flavours of Christmas, but won't take ages to make, although nowadays is made at any time throughout the year.

     

     

     

    The Sugar

     

    As we all know, a cake is not a cake without sugar. ( unless you make one of those cakes without sugar. In that case... that's a cake )

     

    You can use regular caster sugar, which is good for baking, but in this case it won't offer extra flavour.

     

    Light soft brown sugar is a bit mild, I personally wouldn't use it. What you need here is the dark muscovado sugar.

    • Metric:

       

       

       

      200gr Butter

      ( softened, and some extra for greasing )

       

      200gr Sugar

      ( dark Sugar, not brown )

       

      3 Eggs

      ( beaten )

       

      30gr Black Treacle Syrup

       

      200gr Self-Raising Flour

       

      8gr Cake Mixed Spice

       

      4 gr Baking Powder

       

      200gr Grated Fresh Apples

       

      300gr Mixed Sultanas and Raisins




    • Imperial:

       

       

       

      7oz Butter

      ( softened, and some extra for greasing )

       

      7oz Sugar

      ( dark Sugar, not brown )

       

      3 Eggs

      ( beaten )

       

      1oz Black Treacle Syrup

       

      7oz Self-Raising Flour

       

      0.28oz Cake Mixed Spice

       

      0.14oz Baking Powder

       

      7oz Grated Fresh Apples

       

      10.5oz Mixed Sultanas and Raisins




    • Cups:

       

       

       

      1 cup Butter

      ( softened, and some extra for greasing )

       

      1 cup Sugar

      ( dark Sugar, not brown )

       

      3 Eggs

      ( beaten )

       

      1 tbsp Black Treacle Syrup

       

      2 cups Self-Raising Flour

       

      2 teaspoons Cake Mixed Spice

       

      1 teaspoon Baking Powder

       

      2 Grated Fresh Apples

       

      1.5 cups Mixed Sultanas and Raisins




     

     

     

    Directions:


     

    01 - Pre-Heat the oven to 180C ( fan 160C / gas 4 ) / 356F ( fan 320F / gas 4 ).

     

    02 - While you wait for the oven to heat, butter and line with paper the bottom of a round 20cm / 8in and deep cake mould.

     

    03 - Beat in large bowl Butter, Sugar, Eggs, Black Treacle Syrup, Self-Raising Flour, Cake Mixed Spice, Baking Powder until you obtain a pale and thick Batter.

     

    04 - Using a spatula, gently fold in the fruit until evenly combined.

     

    05 - Spoon the Batter into the tin and bake for about 50-60 minutes, or until the Cake is dark. Use a knife, a fork or a toothpick and insert it into the centre of the Cake. If it comes out clean it means the Cake is ready.

     

    06 - Remove from the oven and let it cool completely. Serve.





    Notes:


     

    - Decorate the Cake with the topping of your liking.

     

    - This cake can keep for a 48 hours in the fridge into an airtight container, if the Eggs's expiring date will allow it.
