TRADITIONAL AMERICAN RECIPE: The quintessential American way to start the day has to be pancakes, dripping with maple syrup and criss-crossed with brittle rashers of crispy bacon. This will definately give you a heart attack and slow death... but at least you'll be able to go through the day.
Nigella claims she makes up a batch for her children's breakfast at weekends, despite admitting that it's undeniably a supermom-with-kids breakfast cliché and it's SUPER unhealthy! Whatever Nigella... whatever!
Milk and eggs are the most usual liquid ingredients in a pancake recipe. Nigella adds melted butter to her mix as well, which gives her pancakes a delicious richness of flavour. That'a a good idea, you might want to try. It's not absolutely necessary but if you're going to have a treat, then you may as well go the whole darn hog.
Some other chefs suggest you can use vegetable oil instead, but, unless you're lactose intolerant this seems a shame as it's almost completely tasteless.
Other people use buttermilk in place of ordinary milk, which, as previously mentioned, reacts with the bicarbonate of soda to make their pancakes gorgeously fluffy. It also imparts a subtle tanginess that's particularly welcome if the pancakes are to be served with syrup or anything else sugary sweet. ( Honey and golden syrup are homegrown alternatives to the delicious north American maple stuff ).
For the cooking oil there is a battle going on. The people here are almost evenly split between greasing the pan with a little butter, and wiping it with a bit of oil. A tiny bit of butter will give your pancakes a hint of crispness to contrast with their soft and fluffy interiors. BUT AGAIN... butter is not a healthy option. I don't usually use it.

1.2 cups Milk
1 cup Plain Flour
2 Large Eggs
( beaten )
2 tablespoons Butter
( melted and cooled )
1 tablespoon White Sugar
1 tablespoon Baking Powder
Pinch Of Salt

Directions:
01 - The easiest way to make these is to put all the Ingredients into a blender and blitz.
If you decide to mix up the Batter by hand:
01a - In a bowl, combine Flour, Baking Powder, Salt and Sugar
01b - Beat in the Eggs.
01c - Melted the Butter
01d - Make a well in the Flour and add all the ingredients and mix until the Batter is well combined and smooth.
02 - Heat a smooth griddle or pan on the stove.
03 - When you cook the Pancakes, all you need to remember is that when the upper side of the Pancake is blistering and bubbling it's time to cook the second side. This will take about 1 minute each side.
