02 - Prepare the Broccoli. Take one head of Broccoli and chop it into small, bite-sized pieces.

03 - In a medium-sized pot, melt a third of the Butter over medium heat.

04 - Once the Butter has melted, add the chopped Onion and Celery to the pot. Sauté the vegetables until they become tender and fragrant, which should take about 5-7 minutes.

05 - Add the chopped Broccoli to the pot along with the Broth. Cover the pot and let the Soup simmer for 10 minutes.

06 - After the Soup has simmered for 10 minutes, remove the pot from the heat and let it cool for a few minutes. Once it has cooled slightly, transfer the Soup to a blender, filling the pitcher no more than halfway full. Puree the Soup in batches until it is smooth and creamy... unless you prefer a chunkier soup. In that case you can leave some pieces of broccoli unblended or half blended.

07 - Now prepare the thickening mixture. In a small saucepan, melt the remaining Butter over medium to medium-low heat.
